Baked Sweet Potatoes

Ingredients
- Sweet potatoes (2 lb = 6 servings)
- 1 tbsp olive oil
- Topping Options: cinnamon and pecans, paprika, sour cream, thyme and rosemary
Instructions
- Preheat oven to 400 degrees.
- Wash and dry sweet potatoes. Rub with olive oil. Poke 4-5 times with a sharp knife.
- Place sweet potatoes on a baking sheet.
- Bake for 30-45 minutes, until a fork goes into the sweet potato easily.
- Serve plain or with a topping.
