Healthier Jalapeno Poppers

Ingredients
- 8 jalapeños, sliced lengthwise with seeds and ribs removed
- 6 tbsp low-fat cream cheese
- 6 tbsp low-fat cottage cheese
- 1 clove garlic, minced
- 6 tbsp Panko (or other) breadcrumbs
- Pinch of salt
Instructions
- Arrange jalapeño halves cut side down on a foil-covered baking sheet. Make sure they aren’t touching!
- Broil on high for a 2-3 minutes until just beginning to roast.
- Mix cream cheese, cottage cheese, garlic, and salt together in a small bowl.
- Flip the jalapeños over and fill with the cheese mixture. Don't overfill, as the cheese will bubble while baking.
- Sprinkle breadcrumbs on top of each jalapeño half.
- Bake on the bottom rack under the broiler for just a few minutes, watching closely, until the breadcrumbs are golden brown and the cheese is bubbling.
